This is the best Pumpkin Bread recipe...the one passed from Grandma Marcia Payne. I make this recipe every year, several times. I *try* to wait until October but sometimes I don't make it that long. I crave it all year and can't wait until I get to make it.
Marcia's Pumpkin Bread
3 1/2 c flour
3 c sugar
2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
4 eggs, beaten
1 c vegetable oil
1 large can pumpkin (29 oz)
Sift together all the dry ingredients: flour, soda, salt, cinnamon, nutmeg and sugar. Mix together by hand. Make a well in the center of the dry ingredients. Add pumpkin, oil and eggs. Mix all together. Fills 3 bread pans.
Bake at 350° for 50-60 minutes.
Other variations:
- Mix in 1 1/2 c semi-sweet chocolate chips
- Mix in 1/2-1 c chopped nuts: walnuts or pecans are my favorite
- Make Cinnamon/Sugar topping to add on top: 4 T melted butter, 2/3 c sugar, 2 tsp cinnamon
- Use a Cream Cheese frosting
- Use mini loaf pans and cook for 20 minutes
- Makes great muffins cook for 15-20 minutes depending on size
